For the cupcake sponge:

¾ cups Plain Flour
¼ teaspoon baking soda
¾ teaspoon baking powder
3 tablespoons butter, melted
200 grams condensed milk
½ teaspoon vanilla essence
2 tablespoons chocolate chips

For Frosting:

12 tablespoons icing sugar
6 tablespoons butter
3 tablespoons chocolate, melted

For Garnish

Choco chips
Silver balls, edible

Method to Prepare:

Take the plain flour, baking soda and baking powder and sieve it well. Now in a separate bowl take the condensed milk, vanilla essence, melted butter and about 2 tablespoons of water and whisk it properly.

The flour mixture and chocolate chips should be made into a batter using a spatula and then poured into greased and dusted cupcake moulds available in the market. Preheat the oven at 200 degree C and then place the cupcake moulds in them at 150 degree C for the next 10-15 minutes or till baked. You will know when the batter leaves the sides of the mould. Leave it to cool.

For frosting, whisk the melted butter and to this add icing sugar and melted chocolate. This should be mixed well and kept aside.

Method to Prepare:

Now take butter and sugar in a bowl with an electric mixer till the time they turn light. To this keep on adding one egg at a time and beat well after each egg is added. Now add half of the flour mixture that you had prepared and then add the sour cream. Put in the remaining flour mixture and beat well. This should be poured in the cupcake moulds and then baked till the time the cupcakes leave the sides of the mould.

For the filling take a medium bowl and to this add the marshmallow crème and the butter and whisk them until they turn soft and smooth. This should be chilled for about 30 minutes to make it firm. Now put this mixture in a piping bag with an opening of about 1/8 of any inch.

Scoop the centre of each of the cupcake from the base and insert the piping bag to fill in the crème. Now replace it bag with the plug that you can scooped out. You can also decorate the cupcakes with the remaining crème you have. Another creative way is to add some edible colour in the crème and whisk it and then use it to create new designs on the cupcakes that children are fond of. You can add chocolate swirls to the decorated crème for garnishing.

3 tablespoon pureed fresh strawberries

Method to Prepare:

Preheat the oven at 350 degree F. And line the cupcake moulds well with butter and dust it with powder and keep aside.

Sieve the flour, baking powder and salt in a medium bowl. In a food processor take all the fresh strawberries and blend them until it is pureed. Keep 1/3 of these strawberries for the cupcake and the rest for the frosting.

Now in a bowl take cream butter and use an electric mixer to blend it well until it turns light and fluffy. To this keep on adding sugar and blend it well. Now on low speed add one egg and the egg whites to it. Blend it well again, till everything mixes together to form a creamy texture. Also add the vanilla essence if you are using it.

Now mix the strawberry puree for the cupcake and milk. Now alternately add the flour and the mixture and keep blending. Make sure that the last part added to the mixture is that of the flour.

This batter should be added to cupcake moulds that you had prepared earlier. Bake this in the preheated oven for 10-15 minutes until brown.

For Frosting:

Add one cup butter and salt and blend it well with an electric mixer until it turns fluffy. Add powdered sugar but only after reducing the speed a little. To this add vanilla essence and the leftover puree of strawberries. This should be blend well. Frost the cupcakes with this mixture using a knife and then place some fresh strawberry slices on them to make it more attractive.
