Servings: 8

Ingredients Bag:

For the Pie:

Plain Flour: 1 and ¾ cups
Self-Rising Flour: ½ cup
Unsalted Butter: 185 grams, cut into small pieces
Eggs: 2
Caster Sugar: 1/3 cup
Milk: 1 tablespoon
Caster Sugar: To Sprinkle

For the Filling:

Granny Smith Apples: 8, large
Lemon Juice: from 1 lemon
Caster Sugar: ½ cup
Unsalted Butter: 45 grams
Ground Cloves: ¼ teaspoon
Ground Cinnamon: 1 teaspoon

Method to Prepare:

Take a bowl and sift both the flour in it. To this add the butter and rub the fingertips with the flour while lifting the mixture in a way that the air is properly incorporated inside the mix. This will make it lighter. This should be done till the flour becomes somewhat like breadcrumbs in nature.

To this add sugar and separately beat the egg with the chilled tablespoon of water and drizzle on the mixture. Take a blunt knife and cut the dough while forming smooth dough balls from the same.

You can add in a little water if needed. This should be divided into two halves, covered with a plastic wrap and refrigerated for about 30 minutes before using.

For the filling, peel the cores of the apples, and cut them into 8 pieces each. This should be tossed with the lemon juice in a bowl instantly which will keep the fruit away from discoloration.

Take a pan and use the filling butter and sugar in it. Wait until it melts and add the apples as well as the clove powder and cinnamon. Stir well so that the apples are properly coated.

This should be done for the next 10 minutes or until the apples are softened a little. Let it cool.

Take the larger of the two pastry balls and use it to cover the 30 cm circle pie dish with 2 mm thickness. This should be done using a rolling pin while unrolling on the pie dish and gently press the corners. Leave the excess ones to hang.

Put in the filling in the centre of the pie dish and place the other rolled pastry ball while brushing with egg and milk mixture to set it.

Not the excess edges should be cut off and then should be crimped well with the fingers. Chill this dish for 30 minutes and then place in a preheated oven on 180 degree C sprinkled with beaten egg and caster sugar. Make small air vents in the pie and bake until it turns golden brown. This will take about 45 minutes.

Serve Hot.
